Rabarberikook. Rhubarb cake

Selle suve parim rabarberikoogi retsept on see ricottaga.
Olen nüüdseks kaks korda juba teinud ja no nii hea on!
Mahlane, pehme, kerge.
Kusjuures ma ei pannud jogurtit, vaid lisasin kohupiima sisse kahe muna asemel 3.

This cake is the best one in this summer! Easy to prepare, soft and juicy. I´m addicted!

100 g cold butter
200 g wheaten flour
salt
2 tablespoon sugar
1 teaspoon lemon juice
1 egg
 
Mix those and leave in fridge for 30minutes. Use 20cm baking pan.

Filling:
500 g ricotta cream cheese
150 g Greek yogurt ( I didn´t use yogurt, just added one extra egg)
2 eggs
1 dl sugar

300 g rhubarbs
 
Bake 40min / 200C-250C.
